Welcome

We are pleased that you selected this self-paced course to fulfill your unique educational needs. You are now a member of the Mizzou Academy's large and diverse student body—a student body that comes from all parts of the United States and many parts of the world. Although the freedom to choose when and where to study is a privilege, it is also a responsibility that requires motivation and self-discipline. To succeed at self-paced learning, you will need to develop a study plan by setting realistic goals and working toward them.

In this particular course, you will explore the various influences on food choices, including psychological, cultural, economic, environmental, social, and industry factors. By considering these influences, you will be able to make informed decisions about your food consumption. An overall course aim is to bring mindfulness back to mealtime and deepen your understanding of how food choices can have an impact on your health. Topics that will be covered include choosing foods based on nutrient content, practicing portion control, and following the "MyPlate" guidelines offered by the U.S. Department of Agriculture (USDA). Additionally, you will learn about special topics such as seasonal food availability, how to maintain a healthy diet during celebrations, and ensuring food safety for all. The course will also offer insight into career opportunities in the fields of food and nutrition. By the conclusion of course, you will possess the knowledge and tools to help ensure lifelong health and make informed decisions regarding your future well-being.

Pacing

This course can be completed in as few as six weeks or take up to 6 months (180 calendar days). The six weeks are counted from the date of the first lesson submission and not the date of enrollment. Here is a pacing guide that you can customize to your needs.

Exams

You are required to take two proctored exams for this course.

There are also writing assignments to submit along with these proctored exams that you will complete separately for both the Midterm and Final.

Grades

Your final grade will be based on the number of points you earn on assignments and exams.

The following grading scale applies only to students who meet this standard:
